The control system not only has the important task of supervising the baking process, but it also has significant impact on the quality of the products being baked and on increasing the productivity of the baking line.
It includes a PLC which controls the overall performance of the whole oven, while each zone is equipped with a thermoregulator to control the temperature within the baking chamber of the zone: the thermoregulator automatically adjust the heating power of each burner in the zone in order to make sure the set temperature remains constant. The PLC supervises the safety, start-up and shut-down procedures. It also supervises the operation of the conveyor and of all the alarms, and it stores all the settings made by the operator for a particular recipe (Recipe Storage Function). This system keeps several operation parameters of the oven in the memory of the PLC. From the screen of the control panel, the operator can easily and quickly recall any recipe and the oven will automatically be re-set to the working parameters listed in that recipe. This prevents errors and ensures consistent operation conditions.
The main parameters stored for each recipe can be summarised as follows:
Baking time.
Set and actual temperature in each baking zone.
In ovens with a fully servo-controlled configuration, the vapours are forcibly extracted from the baking chamber by means of motorized extractors whose speed is adjustable via inverters.
In ovens with a fully servo-controlled configuration, it is possible to set the top and bottom heat distribution parameters for each baking zone.
In the case of a direct gas fired oven, it is possible to select the number and position of ribbon burners to be activated.
Other features obtainable with PLC management of the oven include:
Automatic compensation of production gaps: each zone of the oven automatically reacts by lowering the flame of the burners or opening the extraction damper. This has the practical effect of reducing the amount of over-baked rows that need to be rejected. This is an important improvement to the productivity of the line.
Changeover from one recipe to another is almost immediate.
Automatic start-up and shut-down procedures ensure optimal use of oven time.
Sophisticated feedback controls means energy savings.
No operators are required to manage the oven while in production.
