An important part of the biscuit manufacturing world is the Softdough & Cookies sector. It includes an ample family of products which are manufactured using two main systems: rotary moulding and wirecut/depositing. The latter can be further split into two more sub-categories according to the type of process machine used for production.

Rout press, wirecut and softcenter products: they are considered to be among the richest products as their re cipes contain high levels of sugar and fat.
In particular, the wirecut machine extrudes the dough from its dies:it can be cut by a reciprocating wire in the case of wirecut product; alternatively, strings of continuous dough are collected onto a conveyor underneath and cut before or after the oven in the case of rout press production. This is a flexible machine as it can also be fitted with extra devices for making more sophisticated products, such as those with a soft center of jam or cream. Flexibility in one unit!

The depositor handles very soft dough which can be deposited directly onto the oven band; a wirecut mechanism can be added to the basic unit in order to give more flexibility to this forming unit. A jam topper can be mechanically syncronized to the unit to drop jam, jellies or cream onto the dough shells before baking.

Rotary moulded: the recipes for these products contain less fat than the categories mentioned so far. Dough pieces are formed by extraction from a special mould. Since its structure is so strong, it is the most commonly used biscuit shell for sandwiched biscuits. A broader range of products can be produced using this technology, simply by adding further auxiliary equipment.

Baking is usually carried out in a hybrid oven with radiating heat in the first section of the oven, followed by indirect convection heating. The oven conveyor consists of steel band for soft dough or wiremesh for most rotary moulded products.

After baking, all the types of biscuits described above usually follow the same path: lengthy, natural but hygienic cooling is necessary for all of them in order to avoid “checking” effects. Product stacking is a critical stage where expertise is essential in order to obtain a high level of efficiency in production.
